Nutrient Dense Chocolate Bars:
1.Soak Dates in water while prepping the rest of the ingredients
2. Mix wet ingredients in food processor or blender
3. Combine wet and dry ingredients
4. Bake in buttered dish at 400*F for 25-30 minutes
Wet Ingredients:

30 pitted dates ( pre-soaked and drained)

1 Cup cottage Cheese

2 eggs

1 cup bone broth

⅓ Cup Maple Syrup

1 Cup peanut Butter

5 oz greek yogurt ( okioks makes a high protein yogurt)
Dry Ingredients:

2 Cups oats
-
4 TBS chia seeds
-
2 TBS Cacao Powder
-
1 TBS cinnamon
-
1 Cup Chocolate Chips

How to Process Your Own Cacao:
- Cut open your Cacao Pods
- Remove the beans and place in a bowl
- Rinse the beans
- Cover the beans in clean water (preferably not chlorinated water)
- Secure a terry cloth with a rubber band to cover the bowl and keep bugs out
- Allow your beans to ferment in the water for 5-7 days
- Strain the beans
- Allow the beans to fully dry in the sun or at 100*F in the oven
- Store your beans in a glass jar
- Grind your beans into a fine powder as needed for a recipe
Tip: It's best to keep your dried beans whole until you need them in order to maintain optimal freshness. It can be tempting to grind a lot of beans at once for "efficiency" however, that will significantly reduce the shelf life and quality of your cacao.
