Elderberry syrup -
For SAFETY, elderberries MUST BE COOKED prior to consumption!!!
3/4 cup elderberries
3 cups water
1 cup honey
Simmer elderberries until half of the liquid has condensed.
Allow to cool slightly then add the honey.
Adding the honey after slightly cooling allows the benefits of honey to remain in the syrup (overheating honey destroys beneficial compounds).
Elderberry gummies -
Mix 3 TBS gelatin into 1/2 cup fruit juice ( or water with 1 TBS acerola cherry powder).
Add this mixture to 1 cup warm elderberry syrup.
Heat and mix thoroughly on stove top.
Syringe the hot mixture into candy molds.
Store in fridge and allow to set.
OPTIONAL:
You can add vodka to the syrup to slightly extend the shelf life (not recommended for gummies) - add 1/4 cup of vodka per 1 cup of syrup to extend refrigeration shelf life.
